Don Joel Micromill is a highly regarded, family-run specialty coffee farm and processing mill located in San Luis de Grecia within the West Valley region of Costa Rica. Named in honor of the owner’s father, the mill is operated by second-generation producer Allan Oviedo Rodríguez alongside his son, Ignacio. It has earned global recognition for producing award-winning, lot-specific specialty coffees.

About Process:

The Reposado process (which translates to "rested" or "steeped" in Spanish) refers to an advanced fermentation technique where freshly harvested, whole coffee cherries are intentionally allowed to rest or macerate prior to standard pulping and drying.
