About Process:

Polar Bear Process is a Ultra Slow-dried natural introduced by TNT Coffee Lab. The extremely slow process allows the Enzymes have ample time to break down complex macromolecules into simple sugars, amino acids, and aromatic compounds. This dramatically increases the sheer volume and complexity of flavor precursors, resulting in a multi-layered cup that never tastes flat.

Adrian Santiago, founder of TNT Roasters and TNT Coffee Lab in David, Panama. He got 1st place of Barista Competition Panama in 2020. After many years worked with different Panama farms and process projects, Adrian founded TNT Coffee Lab and started their own coffee project.

Finca Don Cheo (with its production base known as Finca Higa Verde) is a boutique, specialty coffee farm located in the highlands of Volcán, Tierras Altas within the Chiriquí Province of Panama. Blessed with rich volcanic soil and a unique microclimate, the estate is dedicated to cultivating premium micro-lot specialty coffees.

For decades, this farm has focused entirely on one thing: growing world-class coffee cherries.
